    Preheat oven to 450 degrees. Wash and dry all produce.

    Toss red onion , zucchini , and tomato on a baking sheet with a large drizzle of olive oil , half the fry seasoning , half the cumin , a pinch of salt , and a pinch of black pepper . Roast in the oven until tender and charred in spots ⏱️ 15 minutes .

    While veggies roast, heat a drizzle of cooking oil in a small pot over medium-high heat. Add israeli couscous , scallion whites from scallions , and veggie stock concentrate ; cook, stirring constantly, until fragrant ⏱️ 30 seconds . Stir in 1 cup water, cover, remove from heat, and let sit until liquid is absorbed ⏱️ 5 minutes .

    In a small bowl , combine zest from lemon , yogurt , half the scallion greens, half the garlic powder , juice from one lemon wedge, and a pinch of salt. Stir to combine and set aside.

    Pat salmon dry with paper towels; season all over with remaining fry seasoning, salt, and pepper. Heat a drizzle of olive oil in a medium pan over medium-high heat. Add salmon and sear until crispy and cooked through ⏱️ 4 minutes per side.
